Made according to time-honored tradition and from 100% silage-free organic hay milk, this hard cheese matures for at least 12 months until it develops its full-bodied, mature flavor.
The long maturation period not only gives it a complex flavor with a crystalline structure, but also a firm consistency that's perfect for grating, slicing, or enjoying on its own. It pairs perfectly with dark farmhouse bread, on a cheese platter, or in Alpine cuisine – from cheese dumplings to gratins.
